Easy Sheet Pan Turkey Sausage, Peppers & Golden Potatoes

Easy Sheet Pan Turkey Sausage, Peppers & Golden Potatoes

A colorful, flavorful, one-pan dinner that's perfect for busy weeknights!

Some evenings, the last thing I want to do is spend an hour in the kitchen preparing dinner, especially when we have a full schedule ahead of us!

That's why I love a good sheet pan meal.

This Sheet Pan Turkey Sausage, Peppers & Golden Potatoes recipe is one of those easy dinners that requires minimal prep, uses simple ingredients, and makes cleanup a breeze.

Everything goes onto one pan, gets tossed with olive oil and a few seasonings, and bakes together in the oven.

No complicated steps. No pile of dishes. Just a delicious, homemade dinner!

Ingredients

Approximately 4–6 servings

  • 12–14 oz fully cooked turkey sausage, sliced into rounds
  • 1 red bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium white onion, sliced
  • 1½ lbs golden potatoes, cut into small, evenly sized pieces
  • 2–3 tablespoons olive oil
  • Salt and black pepper, to taste

Instructions

Step 1: Preheat Your Oven

Preheat your oven to 425°F.

Line a large baking sheet with aluminum foil for easier cleanup.

Step 2: Prep Your Ingredients

Slice the turkey sausage into rounds.

Cut the bell peppers and white onion into strips.

Wash and chop your golden potatoes into small, evenly sized pieces so they cook thoroughly.

Step 3: Season Everything

Add the golden potatoes, bell peppers, white onion, and turkey sausage to your sheet pan.

Drizzle with olive oil and season with salt and black pepper.

Toss everything together until evenly coated.

Step 4: Bake

Spread everything into an even layer. Use a second pan if necessary to prevent overcrowding.

Bake for approximately 30–40 minutes, stirring halfway through, until the golden potatoes are fork-tender, the vegetables have softened, and the fully cooked sausage is heated through.

Cooking time will depend on the size of your potato pieces and how full your pan is.

Step 5: Serve & Enjoy!

Remove from the oven and serve warm!

The golden potatoes make this a complete, satisfying dish without needing rice or another side.

My Tips for Making This Even Easier

Cut your potatoes small: Smaller, evenly sized pieces cook more consistently alongside the peppers and sausage.

Prep ahead: Chop your vegetables earlier in the day and keep them refrigerated until you're ready to cook.

Make enough for leftovers: This is a great option for lunch the following day. Refrigerate leftovers promptly and enjoy within 3–4 days.

Keep it simple: Olive oil, salt, and pepper are all you need to bring these ingredients together.

A Simple Dinner for Busy Families

Between work, keeping up with the house, and getting everyone where they need to be, I am always looking for meals that make our evenings easier.

I love recipes that don't require a long list of ingredients or a complicated cooking process.

This is one of those dinners you can throw together, put in the oven, and move on to something else while it cooks.

Sometimes making family life easier really is that simple!

A little healthier. A little simpler. A little more intentional.
