There are some dinners that look like you put in way more effort than you actually did—and this is one of them.
Crispy chicken cutlets, a sweet-and-spicy hot honey drizzle, buttery golden potatoes, and a fresh lemon arugula salad all come together for a dinner that feels a little elevated without being complicated.
This is exactly the kind of meal I want to make at House of Frantom: simple ingredients, real food, and something the whole family can sit down and enjoy together.
The crispy chicken and potatoes make it hearty enough for the kids, while the lemony arugula keeps the entire plate fresh and balanced. And that hot honey? That’s the part that makes you want to make it again.
Why You'll Love This Dinner
This is a great recipe to keep in your weeknight rotation because everything on the plate works together, but none of it requires complicated ingredients or techniques.
The chicken gets crispy from a simple Parmesan-panko coating, the potatoes roast in the oven while you prepare everything else, and the salad comes together in just a few minutes.

- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- 2 eggs, beaten
- 2 tablespoons olive oil, plus more as needed for cooking
For the Hot Honey
- ⅓ cup honey
- 1–2 teaspoons red pepper flakes, depending on how spicy you like it
- 1 tablespoon apple cider vinegar
- ½ teaspoon garlic powder
Golden Potatoes
Ingredients
- 1½ pounds baby gold potatoes, halved
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried rosemary or Italian herbs
- ½ teaspoon salt
- ¼ teaspoon black pepper
Lemon Arugula Salad
Ingredients
- 5 ounces arugula — or a combination of arugula and spinach
- ¼ cup grated or shaved Parmesan cheese
- Zest of 1 lemon
- Juice of 1 lemon, about 2–3 tablespoons
- 2 tablespoons olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
How to Make It
1. Start the golden potatoes
Preheat your oven to 425°F.
Toss the halved baby gold potatoes with olive oil, garlic powder, onion powder, herbs, salt, and pepper.
Spread them in a single layer on a baking sheet and roast for 25–30 minutes, flipping about halfway through. You want them tender inside with those beautiful golden edges outside.
2. Prepare the chicken
If you're using whole chicken breasts, pound them to an even thickness or slice them into thinner cutlets. This helps them cook quickly and evenly.
In a shallow bowl, combine the panko breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
Add the beaten eggs to a second shallow bowl.
Dip each piece of chicken into the egg and then press it into the panko mixture, coating both sides well.
3. Cook until crispy
Heat the olive oil in a large skillet over medium heat.
Cook the chicken for approximately 3–4 minutes per side, depending on thickness, until the outside is crispy and golden brown and the chicken reaches an internal temperature of 165°F.
Transfer the cooked chicken to a plate.
4. Make the hot honey
Add the honey, red pepper flakes, apple cider vinegar, and garlic powder to a small saucepan.
Warm over low heat for about 2–3 minutes, stirring occasionally. You aren't trying to boil it—just warm everything together and allow those flavors to combine.
Drizzle the hot honey over the crispy chicken right before serving.
House of Frantom tip: If you're feeding kids who aren't fans of spicy food, leave the hot honey off their chicken and let everyone drizzle their own at the table.
5. Toss the lemon arugula salad
Right before serving, add the arugula to a large bowl.
Add the lemon zest, lemon juice, olive oil, salt, pepper, and Parmesan. Toss gently until everything is lightly coated.
I like making this part last so the arugula stays fresh and doesn't wilt while the rest of dinner finishes cooking.
Bring It All Together
Add a crispy chicken cutlet to each plate and drizzle with warm hot honey. Serve alongside a generous pile of golden potatoes and lemon arugula salad.
You get a little bit of everything in every bite—crispy, sweet, spicy, salty, fresh, and bright.
And while it looks like a restaurant-style dinner, it's still completely doable on a regular weeknight.
That's my favorite kind of recipe.
Simple ingredients. A healthier, happier table.
